
Rhubarb
The rhubarb stems are long, large and red-green. Since rhubarb is very sour it arguably tastes better cooked.
Rhubarb is common in desserts and pastries, but with its fresh acidity, it has also had a revival on the dinner plate.
Best stored at 1 to 4 °C.
