
Chioggia beet
From the outside, it looks like a beetroot, but inside it has red and white striped pulp. The reddish leaves are abundant. Chioggia beets have a milder flavour than beetroots.
The Chioggia beet is very decorative and works well raw grated or finely sliced in salads. It can also be served thinly sliced with vinaigrette or boiled topped with butter or vinaigrette. The Chioggia beet turns pink when boiled, losing the sharp colour contrast.
Best stored at 1 to 3 °C.
