
Pea shoots (Pisum sativum)
Depending on the kind, the colour varies from light green to dark green. We call the light straight shoots with a pair of leaves at the top salad, pea shoots, and the larger and darker shoots with many climbers, decorative pea shoots. Both shoots have a fresh, sweet and pronounced pea flavour.
Pea shoots go well with other sprouts, shoots or vegetables in salads, on sandwiches, as a side dish or garnish to any meal. Fried briefly in butter, they pair perfectly with fish.
Best stored wrapped at 1 to 4 °C.
